Healthy super-grain Quinoa

Quinoa (pronounced kinwa) is a grain like crop and it is being referred to as a super grain or super food owing to the high nutritional content. It is known to have originated from South America thousands of years ago where it was the primary crop and was revered with the name “mother of grains”.

Nutritional content in Quinoa

Quinoa grains contain very high levels of protein and are acknowledged to be a rich source of complete protein. Besides, it has lysine and other essential amino acids and high fibre content in addition to a high concentration of minerals such as calcium, magnesium, phosphorous and iron. Quinoa is also gluten-free and is supposedly easy to digest. Eating Quinoa also helps you to understand how to lose belly fat.

Quinoa and Grilled Salmon Salad

Having posted 2 of my own quinoa salad recipes in recent weeks I decided to look around for other good quinoa recipes. The link below takes you to a good simple video demonstration showing how easy it is to make a quinoa salad.

In this example the chef uses grilled Salmon. But you can really top the salad off with many different types of fish or cooked meat. I found his use of lots of herbs interesting. I do not use as much as he does but I am goingto try it out. I am always afraid of swamping the original flavours of the meat or fish with other things.

Potty English Quinoa Salad

Following on from last week’s saffron quinoa salad I made this English Quinoa Salad. It is English only because the ingredients added to the quinoa are all readily available in the UK. The taste is very plain and simple due to the omission of the turmeric and saffron from the other recipe.

50 gms white quinoa

Water – twice the volume of the quinoa

Handful grated fresh carrot

Potty Saffron Quinoa Salad

I have been getting creative again in the last few weeks. I was in a supermarket and saw a display of potted salads. They were all made up and ready to serve. Two potted salads that I noticed was a Saffron Rice Salad and a Saffron Cous Cous Salad. So I thought to myself, “What’s good enough for rice and cous cous is good enough for quinoa”.

The benefit of doing your own salads is that you know that there are no preservatives or odd ingredients added that you do not want. They do not last as long but you can easily accommodate that by cooking small amounts more often. The taste benefits and the nutritional benefits of doing it yourself are huge.
