Serves 1 – Preparation & Cooking time – 30 minutes
- 110g Red Quinoa,
- 300ml Water,
- 25g Raisins,
- 25g Pine nuts,
- 25g Pineapple (Fresh or tinned),
- 1 tbsp chopped mint leaves,
- 1 spring onion,
- 1 tbsp olive oil,
- pinch of salt & pepper
Rinse Quinoa well before cooking,Add quinoa to 300ml of boiling water, return to boil and then reduce heat and simmer for approximately 10 minutes until germ separates. Remove from heat, cover and leave to absorb remaining water. Once the water has been absorbed leave to cool.
Combine remaining ingredients and mix well. Add Quinoa once cooled and mix gently. Serve Immediately or refrigerate.
Can be served as a meal accompaniament or on its own as a snack
