Quinoa Cajun Stir Fry

This recipe is taken from The Complete Guide To Cooking Quinoa. Actually it is a variation on the Cajun Stir Fry recipe. I have taken out the dried spices and herbs and replaced them with fresh basil, chilli pepper and coriander leaves. I am using fresh flavourings increasingly this year for 2 reasons. Firstly They taste better than the dried counterparts.
Secondly They are better for you as most of the healthy vitamins and minerals are still in the fresh herbs.

The quinoa is pre cooked in the normal way before you make up the stir fry meal. The rest of the process is very quick and only takes a few minutes to cook. Stir fry dishes are one of the best ways to eat quinoa. Try this recipe out and you will see what I mean.

Quinoa Cajun Stir Fry – Serves 2 large portions

Ingredients

1/2 cup (100gm) cooked and prepared quinoa
2 Tbsp Olive oils
1 courgette sliced
6 mushrooms sliced
1 onion chopped
1 red pepper
1 tin sweet corn
5 – 10 fresh Basil leaves
1 medium strength chilli pepper
Small handfull fresh coriander
Salt and pepper
5 drops Tabasco sauce

Method

1.Heat the oil in a large pan or wok
2.Fry the vegetables briskly for 5 minutes.
3.Add the quinoa spices and Tabasco sauce
4.Stir fry for a few minutes more
5.Serve as it is or in tortilla wraps. You can also use it as a base for serving a portion of chicken or beef on.

    Hi!
    Your recipe may be ok for some people,but red pepper does not agree with me,neither does sweet corn. By the way what is courgette?

    Don’t put them in. Its very easy to substitute your own choice of veg. Courgettes are small marrows.
