What’s Quinoa?

Having written two books and numerous articles about the subject I am still surprised when someone says to me “What’s Quinoa?”.
Being so closely involved makes me forget the it is one of the forgotten superfoods. Fortunately it is having a renaissance in the 21st century as people discover the many health benefits. It still has not had a great deal of television coverage but that will come as TV chefs realise its good points and start using it.

Why Does Your Quinoa Taste Bitter?

For people new to the delights of eating quinoa it can be a bit of a shock to find out that there is a slight bitter taste to it.
There is always this impression that anything you eat that is healthy and good for you will not taste good. When it comes to quinoa this appears to be true because it can taste bitter if you do not prepare it properly.

Red Quinoa Waldorf Salad With Italian Pan Fried Chicken

This recipe is the first one I know will be included in the new book “Quinoa Recipes For Gourmets”. I don’t know how long it will take to prepare the book but in the meantime you can give this quinoa salad recipe a try.

I have used red quinoa because I like to have a mix of colours in my meals. You can use standard quinoa if you can’t get hold of the red quinoa.
Make sure you allow time for the quinoa to cool and the Waldorf Salad To rest before serving.
