<p>I&#8217;m currently updating The Quinoa Cookbook to add some new recipes and get rid of the typos that I have noticed. As I have said before, Quinoa is being discovered by more and more people daily and they are learning the benefits of quinoa themselves.<br />

<p>The combination of flavours is fantastic. A batch of 24 quinoa flakes bars like this only lasts a couple of days in our house.</p>
<p>In the UK I can only buy my quinoa flakes online. The infinity foods brand shown in the picture was bought from <a href="http://www.baldwins.co.uk">Baldwins.co.uk</a></p>
<p><strong>Ingredients.</strong></p>
<p>1  cup (150gm) Mixed dried fruit</p>
<p>Juice from one large orange</p>
<p>5 drops vanilla Essence</p>
<p>4 tablespoons butter</p>
<p>3 cups (250gm) Quinoa Flakes</p>
<p>1/2 cup chopped walnuts</p>
<p>1/2 cup brown or demerera sugar</p>
<p>1/2 teaspoon cinnamon powder</p>
<p>1/2 teaspoon salt</p>
<p>2 eggs.</p>
<p>Method</p>
<p>To make this recipe you make a dry mix with some of the ingredients and a liquid mix with the rest of them. At the end you combine them together.</p>
<p>1. Soak the dried fruit in the orange juice and vanilla essence for an hour.</p>

<p>2. After an hour you can then start preparing the dry mix.</p>
<p>3. Melt the butter gently on the hob until it has melted. Then switch the heat off.</p>

<p>4. Add the chopped walnuts to the butter.</p>

<p>5. Then add the quinoa flakes and mix together thoroughly so that everything is blended together evenly.</p>

<p>6. Take this mix and put it into a mixing bowl. Add in the brown sugar, salt and cinnamon. Mix well for a minute or so.</p>

<p>7. Leave this mix to one side and return to the fruit mix. Add the 2 eggs to the fruit and mix together well.</p>

<p>8. Put the 2 mixes together in the mixing bowl and combine them completely together.</p>

<p>9. Press the mixture into a well greased baking tin. Make sure the mix has an even depth in the baking tin.</p>

<p>10. Cook the quinoa cookies for 15 minutes on a medium heat (I use 170 degrees) until they start to turn brown. Do not over cook them.</p>
<p>11. Take out the cookies and cut them into squares. Cool them on a cooling rack. The are ready to eat as soon as they are cool.</p>

I have used red quinoa because I like to have a mix of colours in my meals. You can use standard quinoa if you can&#8217;t get hold of the red quinoa.<br />
Make sure you allow time for the quinoa to cool and the Waldorf Salad To rest before serving.</p>

<p><strong>Ingredients</strong></p>
<p><strong>Waldorf Salad Ingredients</strong></p>
<p>1/2 cup of red quinoa (3 oz approx)<br />
1 cup of water (6 fl oz Approx)<br />
Handful of grapes seedless<br />
15 walnuts chopped<br />
Juice of one Lemon<br />
2 sticks of celery chopped<br />
I Eating Apple &#8211; I use Red Empire<br />
Green Salad To serve with</p>
<p><strong>Dressing Ingredients</strong> &#8211; Either 5 Tablespoons of Low Fat Mayonaise OR</p>
<p>I ripe Avocado<br />
2 Tablespoons Extra Virgin Oil<br />
I Garlic Clove Crushed<br />
Juice of one Lemon</p>
<p><strong>Italian Pan Fried Chicken Ingredients</strong></p>
<p>1 Chicken breast sliced into small strips<br />
I garlic clove Crushed<br />
Handfull of fresh Basil leaves<br />
1 large Ripe tomato pureed<br />
Small amount of olive oil for the pan</p>
<p><strong>Method</strong></p>
<p>1 1/2 Hours before serving the meal prepare the Quinoa. Rinse the Quinoa Well and put into a saucepan with the water. Bring the quinoa to the boil and simmer for 12 minutes. The quinoa will absorb all the water.<br />
Cool for 1/2 an hour.</p>
<p>If you are making your own dressing simply place all the ingredients into a blender and blend for 1 minute.</p>
<p>When the quinoa has cooled mix it together with all the Waldorf Salad Ingredients. Then add the dressing and mix in thoroughly so that the dressing covers everything.<br />
Put the Salad in a cool place for 20 minutes while you prepare the chicken. The 20 minutes will allow all the flavours to fuse togehter in the salad.</p>
<p>To cook the chicken start by warming the olive oil gently in the pan. Place the chicken strips in the pan and cook for 5 minutes. Add the flavouring ingredients and mix together in the pan. Bring the italian chicken mix to almost boiling and then simmer for a further 5 minutes.<br />
Serve the Red Quinoa Waldorf Salad With the Italian on a bed of green salad leaves.</p>

<p><span style="font-family: Verdana,sans-serif;">One of the most common ways is to use quinoa in salads. This is similar to the way you use rice and cous cous. You can mix the cooked quinoa with a range of raw vegetables, seeds and nuts. It also mixes well with pulses such as haricot beans, kidney beans and chick peas. As well as combining the ingredients together you can add favourite dressings to add a bit of flavour and bite. Because quinoa is so nutritionally complete you can consider a quinoa salad a full meal.</span></p>
<p><span style="font-family: Verdana,sans-serif;"><strong>Quinoa Stir Fry Recipes</strong></span></p>
<p><span style="font-family: Verdana,sans-serif;">Another way to eat quinoa is by quick frying it in a pan with a range of vegetables and herbs. The quinoa has to be pre cooked before using it in this way. You then fry the vegetables for a minute before adding the quinoa. You then quickly stir fry everything for 3 or 4 minutes before serving.</span></p>
<p><span style="font-family: Verdana,sans-serif;"><strong>Quinoa Bread Recipes</strong></span></p>
<p><span style="font-family: Verdana,sans-serif;">Quinoa Flour can be used to make bread but I have yet to find a satisfactory quinoa bread recipe that doesn&#8217;t include some wheat flour. This is a problem as many people are looking for gluten free recipes and in particular gluten free bread recipes. I have searched for 3 years for a decent quinoa bread recipe. If you have one let me know on this blog.</span></p>
<p><span style="font-family: Verdana,sans-serif;"><strong>Quinoa Breakfast and Desserts</strong></span></p>
<p><span style="font-family: Verdana,sans-serif;">Quinoa Flakes and quinoa grain can be used in a range of breakfast recipes and dessert recipes. I am not saying that quinoa milk pudding tastes the same as rice based milk pudding, but for people on restrictive diets it provides an option. Quinoa can be mixed with strong fruity flavours well and it adds body and substance to any recipe.</span></p>

These tortillas are a bit &#8220;tart&#8221; in flavour on their own but with some vegetables or barbecue chicken on top they are fantastic.</p>

<p><strong>Word of Warning</strong></p>
<p>These are very filling due to the inclusion of the husks. One will be enough for most peoples appetite. As with all my recipes the amounts are always a bit rough. I never weigh or measure ingredients apart from using my favourite cup and it always works. This drives my wife mad, but that&#8217;s another story.</p>
<p>This recipe makes about 6 &#8211; 8 tortillas<br />
This depends on how big you like your tortillas</p>
<ul>
<li>3 cups (8 ounces) quinoa flour</li>
<li>2 tsp baking powder</li>
<li>1 tsp salt</li>
<li>4 tbls margarine (4 ounces)</li>
<li>2 cups of warm water</li>
<li>6 tbls psyllium husks</li>
<li>Small amount of olive oil to cook the tortillas in the pan</li>
</ul>
<p>Mix together the psyllium husks and the warm water and set them aside.</p>
<p>Mix the flour, the salt and the baking powder together and then add the margarine. Mix them together until the dough gets a crumble consistency.</p>
<p>Add the water mixture to the flour mixture, It is quite hard to mix the 2 mixes together. Start by using the back of a wooden spoon to press the mixes together. When you have a single dough you will have to knead it for about 3 minutes. Once the dough is fully mixed leave it to rest for 2 minutes.</p>
<p>Cut the dough into 6 -8 small balls and leave them for 5 minutes to rest once more. This resting is important to allow the 2 mixes to fully come together. They will roll out better that way. Roll them out with a rolling pin and flour so that the dough doesn’t stick,  Start in the center and roll. they will not roll as thin as wheat flour tortillas.</p>
<p>Heat a pan with a tsp olive oil on a medium heat and when it is hot start cooking them. Turn them a cuple of times and then serve with your favourite topping.</p>

<p>Here’s a great recipe for an Ultimate Healthy Cookie:<br />
<strong>Ingredients</strong></p>
<p>* 1 cup flour (recommended mix of gluten free flours such as 1/3 cup rice flour, 1/3 cup amaranth flour and 1/3 cup quinoa flour or quinoa flakes)<br />
* 1/2 cup fresh ground almonds (I ground mine fresh in a little coffee grinder but feel free to buy almond meal pre ground)<br />
* 3 tbs fresh ground flax seed (again, I ground mine fresh but they can be purchased ground in the refrigerator section of a health food store)<br />
* 1/2 cup raw honey<br />
* 1 egg<br />
* 2 tbs extra virgin, cold pressed coconut oil<br />
* 1/2 cup apple puree (about one apple with peel in the blender or use 1/2 cup organic 100% pure apple sauce)<br />
* 1 tsp baking soda<br />
* 1/4 tsp salt<br />
* 3 tsp cinnamon<br />
<strong>Method</strong></p>
<p>1. Preheat oven to 350.<br />
2. Mix dry ingredients in one bowl and mix the wet ingredients in a second bowl.<br />
3. Now mix ‘em all together<br />
4. Place on cookie sheet (they will about double in diameter in the oven so space them out).<br />
5. Slip into the oven and bake for about 20 minutes until they are golden and appear dry. They will bake up chewy and delicious.</p>

<p><strong>Quinoa-crusted salmon with zesty crème fraiche sauce</strong></p>

<p>Serves 1</p>
<p>Prep time less than 30 mins</p>
<p>Cooking time 10 to 30 mins</p>
<p>Ingredients</p>
<p>For the salmon<br />
150g/5½oz salmon fillet<br />
55g/2oz Quinoa<br />
1 tbsp olive oil<br />
½ lemon, juice only<br />
For the sauce<br />
90ml/3fl oz crème fraîche<br />
1 tbsp Dijon mustard<br />
1 tbsp chopped fresh parsley<br />
½ lemon, juice only<br />
salt and freshly ground black pepper<br />
lemon wedges, to garnish</p>
<p>Method</p>
<p>1. Preheat the oven to 200C/400F/Gas 6.<br />
2. For the salmon, roll the salmon in the Quinoa, pressing the Quinoa into the salmon to coat all over.<br />
3. Heat the oil in a small ovenproof frying pan and fry the salmon for 2-3 minutes on each side, or until the crust is lightly golden-brown.<br />
4. Transfer to the oven and cook for 6-8 minutes, or until cooked through. Remove from the oven and squeeze over the lemon juice.<br />
5. For the sauce, heat the crème fraîche and mustard in a small pan and stir until smooth and well combined.<br />
6. Stir in the parsley and lemon juice and season, to taste, with salt and freshly ground black pepper.<br />
7. To serve, place the salmon onto a serving plate and pour over the sauce. Garnish with lemon wedges.</p>

The information about quinoa was excellent and the presenters, Nigel Barden, Sally Boazman &amp; Simon Mayo really seemed to be enjoying the quinoa food. For those readers outside the UK you should know that Radio 2 is the biggest Radio station in the UK and the item was featured during the drivetime program which has millions of listeners.</p>

<p>They gave out 2 quinoa recipes. One of them is on this page. the other one will come in a few days time. <p>The recipe given on the show was as follows</p>
<p><strong>Debbie Coles’ Quinoa with Butternut Squash in a Tomato Sauce</strong></p>
<p>From Graham’s Butchers, East Finchley N2.</p>
<p>Serves 4-6</p>
<p>Prep time 15 mins</p>
<p>Cooking time 40 mins</p>
<p>Ingredients</p>
<p>1 medium butternut squash, peeled &amp; cubed.</p>
<p>2 tbsps olive oil</p>
<p>300g Quinoa</p>
<p>Salt &amp; pepper</p>
<p>For the Tomato Sauce</p>
<p>2 tbsps olive oil</p>
<p>2 sliced red onions</p>
<p>2 cloves crushed garlic</p>
<p>2 tbsps fresh grated ginger</p>
<p>½ red chilli (keep seeds in &amp; don’t use the little fiery ones!)</p>
<p>400g tin of chopped tomatoes</p>
<p>100ml red wine</p>
<p>150g plain raw cashew nuts</p>
<p>225ml water</p>
<p>2 tbsps tamari (or soy sauce)</p>
<p>1 tbsp maple syrup (to taste)</p>
<p>Handful of chopped coriander</p>
<p>Method</p>
<p>Peel &amp; dice the butternut squash<br />
Mix with olive oil &amp; add salt &amp; pepper to taste<br />
Roast butternut for 20-25 mins until tender on gas 180C<br />
Meanwhile rinse the Quinoa in a fine sieve in cold water &amp; put into boiling water (approx 1 pint – just so it’s covered) &amp; add salt<br />
Simmer for 15 mins, stirring occasionally, until grains expand<br />
Slice red onions &amp; fry in olive oil<br />
Add garlic &amp; ginger &amp; cook for a few mins until soft<br />
Add finely chopped chilli<br />
Add red wine &amp; simmer for a few mins to reduce slightly<br />
Add chopped tomatoes, water, cashew nuts, tamari (or soy sauce) &amp; maple syrup, salt &amp; pepper to taste, &amp; simmer for 15-20 mins<br />
Place Quinoa in a dish with the butternut squash on top, pour over sauce &amp; add chopped coriander.</p>

I have taken out the dried spices and herbs and replaced them with fresh basil, chilli pepper and coriander leaves. I am using fresh flavourings increasingly this year for 2 reasons. Firstly They taste better than the dried counterparts.<br />
Secondly They are better for you as most of the healthy vitamins and minerals are still in the fresh herbs.</p>

<p>The quinoa is pre cooked in the normal way before you make up the stir fry meal. The rest of the process is very quick and only takes a few minutes to cook. Stir fry dishes are one of the best ways to eat quinoa. Try this recipe out and you will see what I mean.</p>
<p><strong>Quinoa Cajun Stir Fry</strong> – Serves 2 large portions</p>
<p><strong>Ingredients</strong></p>
<p>1/2 cup (100gm) cooked and prepared quinoa<br />
2 Tbsp Olive oils<br />
1 courgette sliced<br />
6 mushrooms sliced<br />
1 onion chopped<br />
1 red pepper<br />
1 tin sweet corn<br />
5 &#8211; 10 fresh Basil leaves<br />
1 medium strength chilli pepper<br />
Small handfull fresh coriander<br />
Salt and pepper<br />
5 drops Tabasco sauce</p>
<p><strong>Method</strong></p>
<p>1.Heat the oil in a large pan or wok<br />
2.Fry the vegetables briskly for 5 minutes.<br />
3.Add the quinoa spices and Tabasco sauce<br />
4.Stir fry for a few minutes more<br />
5.Serve as it is or in tortilla wraps. You can also use it as a base for serving a portion of chicken or beef on.</p>

<p>This is a quick healthy meal that is loaded with good nutrients and protein. This meal will definitely boost your energy levels and tastes fabulous.</p>
<p>Ingredients<br />
2 Tilapia Fish Fillets<br />
2 Lemons<br />
2 Teaspoons of Oil<br />
2 Garlic cloves<br />
1 Teaspoon of Basil<br />
1 Teaspoon of Lemon Pepper seasoning<br />
Dash of Salt<br />
Butter<br />
¼ Cup of Water<br />
1 cup of Organic Quinoa (available at your local health food store or Trader Joes)<br />
2 cups of Water<br />
1 Chicken Bullion Cube<br />
1 ½ cups of Broccoli<br />
½ cup of corn</p>
<p>To start off you&#8217;ll want to make the marinade for the fish. Juice one lemon and place in a bowl with the ¼ cup of water and oil. Mince the garlic and add to the liquid ingredients, also add the basil, lemon pepper seasoning and the salt. Mix the ingredients thoroughly with a fork. Once the marinade is mixed, cover fish and allow to marinade for at least 2 hours. For best results marinade over night.</p>
<p>After the fish has marinaded, heat up a skillet on medium heat with about a 1/16 cup of butter (just enough to coat the pan). Once the pan is heated up enough add the fish and marinade and allow to cook evenly on both sides (5 mins each side). Turn heat down to low and let fish simmer for another 5 minutes to allow more marinade to soak in.</p>
<p>While the fish is cooking heat up the 2 cups of water to boiling and add the quinoa and chicken bullion cube. Allow to simmer for 15-20 minutes. You can also steam the broccoli and heat up the corn at this time.</p>
<p>Now that everything is done sit down and enjoy your meal.</p>
