Red Quinoa & Fruit Salad

Serves 1 – Preparation & Cooking time – 30 minutes 110g Red Quinoa, 300ml Water, 25g Raisins, 25g Pine nuts, 25g Pineapple (Fresh or tinned), 1 tbsp chopped mint leaves, 1 spring onion, 1 tbsp olive oil, pinch of salt & pepper

Quinoa has a glycemic index of 51 which is in the green zone for followers of the GI diet. I am now on this glycemic index diet having lost a lot of weight on the crazy lighter life diet.

I discovered Quinoa 2 years ago in my mission to improve my diet and general health. I have since then lost 5 stone in weight and become something of a quinoa freak. I regularly include quinoa recipes in my meals and have a huge collection of home grown quinoa recipes.
